Treebeard's Red Beans & Rice

1 lb. Dry red kidney beans     
2 cloves garlic, chopped fine  
3 Bay Leaves
6 1/4 cups water                     
1 ½ tsp. thyme                        
¾ tsp Cayenne Pepper
2 med. Onions, chopped         
2 ½ tsp. salt                                                         
2 stalks celery, chopped         
1 ½ tsp Oregano                      
Shredded Cheese
Ham bone or salt pork                            
1 lb. Sausage-spicy and good!
Green Onions
½ bell pepper, chopped                                                           
Brown/White Rice


Instructions:

Rinse the beans thoroughly.  Then soak beans in the water overnight.  Don’t throw out the water, you’ll cook the beans in the same water you soak them in.  If you forget to soak them overnight, put them in the water and bring to boil.  Reduce heat and simmer 2 minutes.  Remove from heat and let stand 1 hour.  Again, keep the water.

 

                When ready to cook add onion, celery, bell pepper, garlic, and ham bone or salt pork.  Bring to boil, then simmer for 1.5 hrs or until beans get soft and start to thicken.  Add seasonings and your GOOD, FAT, SPICY sausage and continue simmering for 30 minutes.   If you need to thicken more-the thicker the better-mix 2 tbsp flour in a bit of warm water and pour in.  Mix it in well.  Leave out sausage for a lower fat meal.

               

Serve over a bed of rice with shredded cheese and chopped green onions on top!
